queenb Bakes! Spiced Feijoa Cake

This delicious Feijoa Cake recipe is an older recipe from the Edmonds Cook Book, but they have a new version available here.
Cake Ingredients:
- 175g Butter (Softened)
- 1 Cup Caster Sugar
- 3 Eggs
- 1 Teaspoon Vanilla Essence
- 1 Cup Chopped Peeled Feijoa
- ¼ Cup Chopped Crystallised Ginger
- 2 ½ Cup Standard Grade Flour
- 2 Teaspoons Baking Powder
- ½ Teaspoon Baking Soda
- 2 Teaspoons Ground Ginger
- 1 Cup / 250g Sour Cream
Method:
Cream butter and sugar until light and fluffy. Add eggs one
at a time, beating well after each addition. Beat in vanilla essence. Fold in
feijoas and crystallised ginger. Sift together flour, baking powder, baking
soda and ground ginger. Fold into creamed mixture. Fold in sour cream. Transfer
mixture to a 22cm round cake tin that has had the base lined with baking paper.
Bake at 180*C for 1 hour or until cake springs back when lightly pressed. Leave
in tin for 10 minutes before transferring to a wire rack. When cake is cold,
spread with cream cheese icing.
Cream Cheese Icing Ingredients:
- 2 Tablespoons Butter (Softened)
- ¼ Cup Cream Cheese
- 1 Cup Icing Sugar
- ½ Teaspoon Grated Lemon Zest
Method:
Beat butter and cream cheese until creamy. Mix in icing
sugar and lemon zest, beating well to combine. Spread the cream cheese icing over the cake.
